  1. Use Nonstick Cooking Spray: Before you start grilling, spray the cooking surface with a nonstick cooking spray. This will prevent the meat from sticking, making it easier to rotate and remove without tearing, which helps retain the juices and keeps the meat moist.
  2. Get the Temperature Right: Avoid placing food on the grill until the temperature is stable. If using a charcoal grill, ensure the coals are completely gray before adding meat. This helps maintain consistent heat and ensures that lighter fluid has burned off.
  3. Be Cautious with Lighter Fluid: While lighter fluid can make lighting charcoal easier, it can also affect the taste of your food. Consider using a chimney starter or natural firelighters to avoid the chemical taste.

  1. Thaw Meat Properly: Always cook fully thawed meat. Set frozen meat out 12 to 24 hours before cooking or thaw it in the microwave. Bring refrigerated meat to room temperature before grilling to ensure even cooking.
  2. Avoid Cross-Contamination: Never place cooked meat back on the same plate that held raw meat. Use clean utensils for handling cooked food to prevent foodborne illnesses.
  3. Don’t Poke the Meat: Poking holes in the meat while cooking causes juices to escape, leading to dry, unappealing meat. It can also cause a buildup of grease on your grill, making cleanup more difficult.
  4. Keep the Lid Closed: Resist the urge to constantly open the grill lid. Each time you open it, you change the temperature, which can dry out your meat and prolong cooking time.
  5. Control the Heat: High heat isn’t always better. While it can be useful for quick cooking, too much heat can dry out and burn your meat. Moderate heat often delivers better results.
  6. Skip the Foil: While aluminum foil can simplify cleanup, it gives your food more of a fried taste than a true grilled flavor. Cook directly on the grill for authentic BBQ taste.
  7. Time Your Sauce Right: If using barbecue sauce, wait until the end of the cooking process. Adding sauce too early can lead to burning and dry out the meat.
